It would be impossible to compile a list of the best dishes. The favorable climatic and geographical conditions have enabled the cultivation of special plant species and the availability of tasty meat and fresh fish. A true delight for the eyes and the palate!
The typical dishes of Apulia are known for their skillful use of raw ingredients such as wheat, which covers and beautifully colors the vast landscapes, or milk produced by healthy animals that often graze peacefully and freely beyond the dry stone walls.
Wheat for the production of various pasta types like Orecchiette, crispy bread, and Taralli; crispy rings of unleavened dough baked in the oven. Other essential delicacies among typical Apulian products include the fragrant Altamura bread with its crispy crust and rich straw-yellow crumb, or the delicious Focaccia Barese, available in a thousand variations, but generally low, crispy at the edges, soft in the middle, and topped with tomatoes.
Milk, on the other hand, produces numerous dairy products, from mozzarella and fresh ricotta to creamier and more flavorful aged cheeses like Caciocavallo.
Another dish that perfectly answers travelers' questions: “What to eat in Puglia?” is undoubtedly Orecchiette with turnip greens : The highlights here are the characteristic fresh, dome-shaped pasta, the grainy, bitter turnip greens, and the fried anchovies, which add an extra layer of flavor. In Puglia, everything is exclusively prepared or seasoned with the distinctive extra virgin olive oil and accompanied by wines from the best wineries, pressed from juicy, local grapes. Puglian cuisine is considered one of Italy's most authentic and down-to-earth regional cuisines.
